1. Be a helper
I’ve gotten into the practice of regularly asking myself what I need then finding a way to make it happen. The key is to listen. And then, to act. I’m not talking about shopping sprees (at least not the typical sort) or spa days. Sometimes I need alone time. Or a nap. Or time with friends. Or time with just Cory. Or family time. Sometimes (like last Sunday) I need to deep clean my kitchen. Other times, I need to stay in my pajamas all day. Or get out for some fresh air.
What I need is usually doable.
A couple of weeks ago, during a time of intense stress (the common variety) I needed a few hours in my kitchen. And I almost always need delicious food.
One of my close friends was in the thick of caring for her spouse after a medical emergency, so I decided to “feed two birds with one scone,” as we now say.
I made my list (she’s vegetarian), picked up supplies, and listened to music while making two delicious meals on a slow Sunday afternoon. On Monday, I delivered the meals to three different friends/families.
This was a win-win-win situation. I was glad I listened to myself and acted accordingly. The whole experience was a reminder that often, when life feels hard, making life a smidge easier for someone else helps. This is the trick math of love.
Here’s what I made:
Cauliflower Chana Masala (do not sleep on this!)
and
5-Ingredient Tomato Basil Soup
1 T olive oil
3 cloves of garlic, minced (if they're really small cloves, use more!)
1 tsp sugar
1 tsp sea salt
1 28-oz can crushed tomatoes with basil
1 28-oz can regular crushed tomatoes
2 cups chicken (or veg) stock
1/4 cup heavy cream
Big fistful of chopped fresh basil (1/4 - 1/2 cup, depending on your preference. I like lots!)
Heat oil in your soup pot over medium heat and add garlic until softened, being careful not to burn it. Add both cans of tomatoes, sugar, salt, and broth. Cook at medium heat for a few minutes, then drop to low and simmer at least 10 minutes, though I usually do at least 20.
Before serving, add cream and top with basil.(I also sent grilled cheese fixins.)
